WHO WE ARE Wood Fired Edibles is a mobile Artisanal Wood Fired catering/events company based in Brooklyn. We operate in and around NYC and the Tri-State area, are vendors at America’s largest weekly outdoor food market, SMORGASBURG, World Trade Center, 9/11 Memorial and The Oculus. We have many catering clients, most notably Google, Universal Television, City Harvest and various Television and Movie Sets/Locations/Studios, photo shoots, Concerts , Music Festivals, Charities and events including, Photoville, Movies With a View in Brooklyn Bridge Park, Queens Night Market, Grand Bazzar NYC, Queens Museum. THE PIZZA MAN Charlie Carlotti was born in the Italian section of Williamsburg Brooklyn where great food traditions were practiced daily in homes and neighborhood specialty food shops. It was ingrained in him that not only quality ingredients were important, but special techniques as well. He started working in Pizzerias at the age of eleven washing dishes and working in the kitchen. There he expressed interest in food and learning the art of pizza making. The 40 year obsession started then and continues now! THE DOUGH You can’t build a home without a strong foundation, the same goes for great pizza. The dough is the foundation. We make our dough in our Brooklyn kitchen with Brooklyn water, secret blend of flours, and a “Sourdough Mother or Madre” fermentation/rising process for at least 72 hours.
